From appetizer to dessert

November 23, 2021

In 5 appointments we will develop the Christmas menu in a 100% vegetable key, with an in-depth study on some ingredients and aspects of vegan cuisine.
 
At the end of each single lesson, lasting about 1 hour and a half, we will taste the dish together.

 

APETIZER 23 NOVEMBER 2021

 Sweet and sour hood, marinated artichoke, avocado sauce and cashew spread, accompanied by homemade seed crackers.
 
Deepening on hot and cold marinades
 

FIRST DISH 30 NOVEMBER 2021

 Tagliatelle with red lentils with mushroom ragout, on saffron vegetable béchamel and black cabbage chips
 
In-depth analysis of legume flours
 

THE MAIN COURSE 7 DECEMBER 2021

 Tempeh braised with grapes on apple and carrot sauce, accompanied by potatoes with aromatic salt

- the ingredients for making a cake
- 2 homemade masala (spice mix)
- the lacto-fermented lemon

At each lesson you will be given a small handout with the recipe and some notes on the ingredients we are going to use.
