It also happens to you to come across a recipe while running around on the web and to say: "Wow, I want to try this!".
And then, since there are so many "wow" in life, here is a very long waiting list of dishes never made.

But no! Today I did it and I present my version of: 
crispy mashed potatoes. 

A research that goes crazy almost everywhere and that, I must say, until I tried it I didn't understand why;)
A disarming simplicity combined with a lot, a lot of taste.

Method


Boil the new potatoes in their skins (take them organic!). Then drain them and as soon as they are less hot, gently mash them with the palm of your hand. Season them with chilli, sumac, dried thyme, sesame seeds, good oil and salt. Oil a baking tray and bake it for 15 'at 250 ° C.

I completed the dish by adding the organic ketchup of Pralina Salento with mineral and sweet and sour tones, yogurt (I made of soy, drained lightly in a gauze to firm it and seasoned with garlic and salt), leaves of Verbena odorosa otherwise known as Luigia herb, which if you don't know, I invite you to deepen it because it is an extraordinary plant.

Serve with your favorite fresh salad.
